Ninja Scroll ( the movie the series was kinda boring) I mean it had great action, animation, ninjas, samurai.  Really just a solid film over all

Samurai anime: Shigurui
Ninjas: Basilisk
Both are very gritty takes on their respective genres. the action sequences are very well done and the characters (even the not-so-likable ones) are very well fleshed out. Basilisk does tend to have some supernatural elements in it, but Shigurui is probably as real as it gets.

Rurouni Kenshin is a classic.  well, except for episodes after Kyoto Arc. It got off tangent from the manga and it sucked >< Anyway, I liked the dubbed version (not the SONY dub one! very baad). When it was first televised. It was something every boy don't want to miss xD Boy, I missed watching that..
